How would I add a column to my quote template for a discounted unit price for each item on the quote?

Make sure you have discounts turned on by having discount types configured.

Thanks. I did figure how how to add a Discounted Unit Price column to the quote PDF. I had to manually edit the Quote PDF custom document to create a new column and display the final_resale_currency parameter.
