Is there a way to hide or auto generate someones name and email address on the PQuotes/POs? It always uses the person who created the PQuotes name and email, and vendors seem to contact that specific person but we have a purchasing contact that we would like them to reply to.

There isn’t a way to set a default email but you can change the owner of the PQuote or PO and it will populate the correct email.
