I want to take an assembled part and break it down so I can use its components elsewhere. I can see how to build an assembly up, but not how to break it down.

Is this something that was build and received as stock inside of Cetec? If so, you could go back, un-receive the finished assembly, dekit the BOM, and that would put the components back in to stock.
Alternately, you could do manual inventory adjustments to relieve the finished assembly qty, and increase inventory for the components.
